Mexican Food Recipe

Traditional Mexican Chicken Enchiladas Recipe

Ingredients -
12 corn tortillas
3 cooked chicken breast halves, no bones or skin, shredded
½ cup chopped green onions
½ cup chopped fresh cilantro
2 cups chicken broth
1 cup sour cream
¾ cup minced onion
12 oz shredded cheddar cheese
4 oz chopped green chilies
¼ cup butter
¼ cup all purpose flour
Vegetable oil for frying

Preparation:
Preheat the oven to 375ºF. Heat 2 tablespoons of oil in a large frying pan over a medium high heat, and then fry the tortillas on 5 seconds per side until they are pliable. Do them individually and add more oil as required. Drain the tortillas on paper towels and keep them warm.
Divide the chicken, onion (not green onion) and 10 oz of the cheese between the tortillas. Roll them up and place in a greased baking pan, seam side down. Melt the butter in a pan over a medium heat. Add the flour and whisk until it begins to boil. Add the broth, stirring continuously.
Add the chilies and sour cream. Stir occasionally and do not let the mixture boil. Pour this mixture over the enchiladas when hot and thick. Bake the Mexican chicken enchiladas for 20 minutes then top with the rest of the cheese and bake for a further 5 minutes. Use the green onions and cilantro to garnish them.

INGREDIENTS
• 1 pound lean ground beef
• 2 cups salsa
• 1 (16 ounce) can chili beans, drained
• 3 cups tortilla chips, crushed
• 2 cups sour cream
• 1 (2 ounce) can sliced black olives, drained
• 1/2 cup chopped green onion
• 1/2 cup chopped fresh tomato
• 2 cups shredded Cheddar cheese

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
3. Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
4. Bake in preheated oven for 30 minutes, or until hot and bubbly.

This seasoning recipe can be doubled or tripled and stored to use as necessary. This recipe will season 1lb of ground beef.

Ingredients:
  • 2 tablespoons oregano
  • 1 tablespoon chile powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon salt
  • 1 lb ground beef
Preparation:
Shake or mix all ingredients together. To season ground beef- Brown ground beef until well done. Add 1/2 cup of water and seasonings and let simmer until liquid is absorbed. Add additional salt if necessary.

"Enchiladas Verde" or Green Enchiladas with Chicken

 
White cheese and chicken make these Enchiladas Verde memorable as you take the first bite and taste the tangy green chile sauce and chewy corn tortillas. Green Enchiladas with Chicken are always a family favorite so serve some tonight.

Cook Time: 30 minutes
Total Time: 1 hour
Ingredients:
  • 12 corn tortillas
  • 3 cups green chile sauce
  • 1 1/2 cups white shredded cheese (panela, jack, mozzarella, queso blanco)
  • 1/4 cup diced green chiles
  • 1 1/2 cups shredded chicken
  • Warm oil
  • 1/4 cup cotija cheese, crumbled
Preparation:
Toss together the chicken, chiles, cheese and 1 cup of the chile sauce. Dip a tortilla in the oil to soften in. Or you can brush each tortilla with oil and bake in a 400 degree oven for 5 minutes to soften them.
Lay a tortilla flat and fill with about 1/4 cup of filling down the center. Bring the edges over the filling to close it and then lay the tortilla seam side down in a 9x13 baking dish. Repeat until all of the tortillas are filled.
Pour remaining sauce over the top. Sprinkle with the cotija. Bake for 20 minutes at 300 degrees.
